If you see a dish called barbecue chicken, you just might assume it’s been cooked on the grill or in a smoker. While this may be the case in some situations, in Texas there is a popular roasted chicken that also goes by that name.

Each family has their own technique but the gist is the same—you take a chicken, cut it into parts, top it with some onions, and a sauce. As it bakes the chicken takes on the tangy, sweet, and slightly smoky flavor of the ingredients, and after an hour or so your dinner is . . .
