Guacamole with corn (guacamole con elote)

Some things never change and that old saw about Texas weather being predictably unpredictable still holds true.

Take last Sunday, for instance. In the morning, the sky was clear and I went to the downtown Dallas farmers market. I was thrilled to see corn from South Texas for sale. In New York, corn didn’t make its first appearance until early July, so I eagerly grabbed a few cobs as to me, corn is a true sign that summer has arrived.
