Southeast Texas Italian salad

The first time I saw the phrase, “Wop salad,” I did a double-take. I was reading Texas newspaper articles from the 1950s, and in several of the pieces people stated that the dish was a favorite of theirs. I shook my head at the audacity of the language, and yet my curiosity was piqued. What did this offensively named salad consist of to be so beloved?

By most reports, its origin was in New Orleans. In the early 1930s, Italian-Americans there began offering the salad in restaurants, with no one even batting an eye at the name, which . . .
