Recently, I’ve been feeling nostalgic for the cafeteria experience. While there are many dishes I’ve enjoyed there over the years, there was always one item I was curious about but never tried—the pickled jalapeños stuffed with pimento cheese. This snack usually appeared near the end of the line in between the breads and the desserts.

Now, jalapeños stuffed with cheese are abundant in Texas. Typically, fresh peppers will be filled with cream cheese, then breaded and fried. Or, perhaps they will be baked, grilled, or smoked, either unadorned or wrapped in bacon. No matter how . . .
