Hatch green chile chicken enchiladas

In most regions of Texas, when one orders enchiladas verdes, the green salsa that drapes the dish will be made with tart tomatillos and green peppers such as jalapeños or serranos. Perhaps a poblano chile may be included, as well, but the foundation of this sauce is tomatillos and not peppers, which means it’s typically bright and zesty without much heat.
