Brisket jam

A couple of years ago, I started seeing mentions about a new condiment: brisket jam. While there wasn’t too much information available about this curiously named concoction, as it was spotted at barbecue spots in Texas, I imagined something that was smoky, savory, and sweet.

Brisket jam hasn’t arrived in Dallas yet, but that will probably change soon as an outpost of Aaron Franklin and Tyson Cole’s smokehouse Loro will be opening soon, which was one of the earliest spots to offer it. So far, I’ve also seen it on menus in Waco at Guess Family . . .
