Chili cheese enchilada casserole

My uncle Austin has recently moved to the family farm to assist my grandma, who’s now 93 and prefers not to cook nor clear brush down by the lake (though she still enjoys riding her mower). Austin likes to use lots of chiles in his recipes, though my grandma likes things less potent. As such, he’s been toning down the spice, though on a visit last fall he did make a chili cheese enchilada casserole that was classic Tex-Mex.
