Creamed spinach with jalapeños

In 1980, New York writer Laurie Colwin visited Texas for a literary festival at SMU. During her time there, she ate in a Dallas home where she was served creamed spinach laced with cheese and jalapeños. Enchanted with the dish, Colwin asked for the recipe. She later shared it with her readers in her Gourmet magazine column.

In 2006, when food blogging started, Laurie Colwin’s two books, Home Cooking and More Home Cooking, which included many of her magazine stories . . .
