Sopa Tarasca

When reading an old issue of Texas Highways, I came across a recipe for a dish called sopa Tarasca. It was a pureed bean soup that was topped with fried tortilla strips and avocados. It sounded like one of my favorite party dips blended into a one-pot dish. I wanted a bowl immediately. 

What’s interesting, is that I had lived over half a century before I encountered this dish. While I’ve long been a fan of soups . . .
