On a visit to Houston last year, a friend suggested I go have fried chicken. While I’m always up for something crispy, I thought it was curious that she would suggest fried chicken when that was one Southern dish there was plenty of availability in New York City. She shook her head and said, “They may have fried chicken in New York, but I don’t think it tastes like this.”

She directed me towards a place called Himalaya, which has become renown for its Indian-inspired twists on classic Texas dishes, such as said fried chicken, but also . . .
