Chicken calabacitas stew
For the past few years, I’ve been drawn to creating a dish using chicken and yellow squash. In several of my South Texas community cookbooks, this dish appears in several different guises, and in theory, it appears to be a hearty, quick dish.
However, each time I’ve made it, I’ve taken a bite and been underwhelmed. Whether I combined the meat and squash with tomatoes, green chiles, tomatillos, or a heavy dose of herbs and spices, the textures and flavors did not combine well.
