Kimchi mac and cheese

A few years ago, I learned about kimchi grilled cheese sandwiches from the Washington Post food editor Joe Yonan. He’d included a recipe for it in his cookbook, Serve Yourself, and at the time, cheese and kimchi together struck me as unusual. That said, Joe grew up in San Angelo and like most Texans, he’s a fan of big, bold flavors, so I knew I could trust both his palate and judgment.

Kimchi is a Korean fermented dish comprised of cabbage, aromatics, and Korean red chiles. It’s crunchy, tangy, and has a kick, which of course makes . . .
