King Ranch hominy casserole
There are several ways to make a cheesy, creamy hominy casserole, and my grandma’s is the simplest method of all. While some recipes have you make a roux and others use heavy cream to bind everything together, hers calls for sour cream and shredded cheese.
This version is not any less rich or comforting than the others, but it’s much easier to prepare. You just stir together the homily with the sour cream, cream cheese, and melting cheeses. The rest is up to you. It’s a solid foundation for a host of ideas.
