Fried green chile strips

After a weekend at a friend’s ranch house in the Panhandle, I decided to stay in the area a couple more days. That night in Amarillo, I went to a restaurant and asked the waitress what she thought was the most representative dish of the area. She recommended fried green chile strips. I placed an order and have been hooked ever since.

Now, fried green chile strips may sound odd, and to be honest when I ordered them I had no idea what I would be receiving. So, for the uninitiated, here's what they are.
