Arroz con pollo

A reader once said his favorite comfort food was arroz con pollo. It was a weeknight staple in his home growing up in McAllen, and no matter where he found himself in the world, whenever he had a plate of fluffy seasoned rice along with tender pieces of chicken, he was back in his childhood kitchen.

While arroz con pollo is found in almost every Latin American country’s cuisine (as well as Spain), each place’s version differs. Now, as the name implies, there is always rice and chicken involved. But one culture may include olives while another may . . .
