Chicken and chorizo tinga

Over the years, many readers have asked me if I have a recipe for chicken tinga. While I don’t have one label labelled as such, it occurred to me that this chicken chipotle taco is almost a tinga in everything but name, since it has the basic ingredients and the cooking method is similar, too.

This begs the question—what is a tinga? The dish is a Mexican stew or guisado, which originated in the state of Puebla. While . . .
