German potato salad, Dallas style

Back in June 1969, the Dallas Morning News featured a German potato salad from a restaurant on Lovers Lane called The Rib. It was a barbecue place that opened in 1950 and it served all the Texas favorites. Though despite its name, The Rib was most famous for its sausage.

When Texas Monthly wrote a capsule review for its restaurant guide in 1983, it noted that the meats were fine but the side dishes weren’t much. This is often the case with barbecue restaurants, so when I spotted the potato salad recipe, I wondered why the owner, a man . . .
