Coffee-chipotle ribs

The story goes that one early morning in the mid-1990s, Houston chef Robert Del Grande spilled some of his coffee grounds onto his workstation where he was prepping a filet of beef.

Not wanting to waste the meat, he left on the coffee, adding some chile powder and other spices and herbs. After cooking the steak, he realized that the coffee added depth and warmth to his Southwestern-inspired seasoning. When he served it to his customers, it was a hit. A new flavor profile was born.
