Spinach enchilada casserole

When I was growing up in Houston, we lived out in the suburbs, closer to Tomball than downtown. While I enjoyed my school, my classmates, and my home, my friends and I also had a special fascination with Houston proper, the part of the city that is inside the 610 loop.

We were often told by other Houston students we’d meet at UIL competitions, sporting events, or at area-wide church activities that where we lived wasn’t true Houston. So, naturally, we had a bit of an inferiority complex.
