Hatch chile hummus
When I graduated from college in 1991, I took an internship at the Houston Press. One day, the art director sent me to pick up lunch and she placed a large order at Kojak’s, a Middle Eastern deli. Not familiar with the cuisine, I asked what I should get. My colleague suggested a falafel with a side order of hummus.
The falafel was fried chickpea balls nestled in a warm pita and it was a satisfying sandwich.
